The singular form is also correct with the first case:

e.g. I`ve got a week`s holiday starting on Monday.

Your are right Mr Essam
But in my opinion we'd better present the general rules first and keep the exeptions for later time
We should give the exeptions when we make sure that all our students understand the general ones
And to add to your remark, we can use this structure without "a" whenever we use a plural noun after the NUMBER-NOUN construction
For example
Our tour company organises two-week holidays to Hurghada this summer
